Herby Cucumber, Radish and Fennel Salad

Ingredients

Directions

1. Wash the radishes, fennel, green onions, parsley, cilantro, and dill. Thinly slice the red radishes, fennel bulb, and 2 stalks of green onions. Chop 1 cup of Italian parsley, ½ cup cilantro, and ¼ cup dill.

2. In a large bowl combine the cucumber, radishes, fennel, green onions, parsley, cilantro, and dill.

3. In a small bowl, whisk together the olive oil, lemon zest, lemon juice, Dijon mustard, garlic clove, salt, and pepper.

4. Add the dressing into the salad and toss until combined.
