Fennel & Citrus Salad

Cooking Times
Ingredients
- 6 cups mixed greens
- 1 blood orange, navel orange, or grapefruit, cut into segments
- 1 bulb Cal-Organic Fennel
- 1/4 Cal-Organic Red Onions
- 1/4 cup macadamia nuts, or any type of nut or seed
- 2 tbsp olive oil
- Juice of one lemon
- 1/2 tsp sea salt
- 1/2 tsp pepper
Directions
- Wash the fennel and remove the stalks where they meet the bulb. Save the stalks to use in homemade broth and stock. Cut the root end off of the bulb and slice the bulb in half. Remove the triangular core from each half and shave or thinly slice the bulb.
- Slice the red onion.
- Combine all salad ingredients in a bowl and add olive oil, lemon juice, salt, and pepper. Toss and serve!
