Spicy Cauliflower Tacos with Cilantro Lime Crema

Ingredients

  • 1 medium head Cal-Organic Cauliflower
  • 2 tbsp extra virgin olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 large avocado
  • 1 bunch Cal-Organic Spinach
  • 4-6 small flour tortillas
  • 3 limes
  • 1 cup sour cream
  • 2 tbsp mayonnaise
  • 1 bunch Cal-Organic Cilantro
  • 1 clove, fresh garlic
  • Salt, to taste

Directions

  1. Preheat oven to 450 F.
  2. Wash and chop the cauliflower into small florets. Wash the spinach and cut 1-2 inches off the stems. Slice the avocado and 2 of the limes into wedges.
  3. In a large bowl, mix together the cauliflower florets and olive oil until fully coated. Sprinkle the dry seasonings and 1 tsp of salt over the cauliflower and gently toss until combined.
  4. Spread the cauliflower evenly onto a lined baking sheet and bake for about 25 minutes or until tender.
  5. While the cauliflower is cooking, prepare the cilantro lime crema. Add the sour cream, mayonnaise, ¼ cup cilantro, juice of 1 lime, garlic clove and ½ tsp of salt to a blender and blend until smooth. Add more lime juice and salt to taste.
  6. To assemble the tacos, heat up the tortillas on a skillet. Place a small handful of spinach onto a tortilla and the baked cauliflower on top. Top with the sliced avocado, fresh lime juice and a drizzle of cilantro lime crema. Enjoy!
