Cooking Times
Ingredients
- 1 medium head Cal-Organic Cauliflower
- 2 tbsp extra virgin olive oil
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 large avocado
- 1 bunch Cal-Organic Spinach
- 4-6 small flour tortillas
- 3 limes
- 1 cup sour cream
- 2 tbsp mayonnaise
- 1 bunch Cal-Organic Cilantro
- 1 clove, fresh garlic
- Salt, to taste
Directions
- Preheat oven to 450 F.
- Wash and chop the cauliflower into small florets. Wash the spinach and cut 1-2 inches off the stems. Slice the avocado and 2 of the limes into wedges.
- In a large bowl, mix together the cauliflower florets and olive oil until fully coated. Sprinkle the dry seasonings and 1 tsp of salt over the cauliflower and gently toss until combined.
- Spread the cauliflower evenly onto a lined baking sheet and bake for about 25 minutes or until tender.
- While the cauliflower is cooking, prepare the cilantro lime crema. Add the sour cream, mayonnaise, ¼ cup cilantro, juice of 1 lime, garlic clove and ½ tsp of salt to a blender and blend until smooth. Add more lime juice and salt to taste.
- To assemble the tacos, heat up the tortillas on a skillet. Place a small handful of spinach onto a tortilla and the baked cauliflower on top. Top with the sliced avocado, fresh lime juice and a drizzle of cilantro lime crema. Enjoy!
