Guacamole Potato Skins

  1. Preheat oven to 400℉. Wash and dry the potatoes, then pierce all over with a fork. Place on a baking sheet and bake until the potatoes are tender and skins are crisp, about 40 minutes.
  2. Chop cilantro, slice jalapeño and dice red onion and tomato. Combine avocado and lime juice in a large bowl and mash together, leaving some chunks for texture. Fold in chopped onion, jalapeño, tomatoes and cilantro. Mix well and add salt to taste. 
  3. Remove the potatoes from the oven and let cool about 10 minutes. Set oven to broil. 
  4. After cooling, slice each potato in half lengthwise and use a spoon to scoop out the insides. Season skins with salt and pepper and save the scooped potato for another use. 
  5. Place potato halves skin-side down on the baking sheet and broil for 5 minutes.
  6. Remove potato skins and place on a serving platter. Fill the potato skins with guacamole, then garnish with extra jalapeños and cilantro. Serve with ranch dressing for dipping and enjoy!
