Guacamole Potato Skins

Ingredients
- 3 Cal-Organic Red Potatoes
 - 3 Cal-Organic Gold Potatoes
 - Salt and pepper, to taste
 - 2 avocados
 - 1 lime
 - 1 tbsp. Cal-Organic Cilantro
 - ½ tsp. salt
 - ½ small Cal-Organic Red Onions
 - 1 small tomato
 - 1 jalapeño pepper
 - Ranch dressing
 
Directions
- Preheat oven to 400℉. Wash and dry the potatoes, then pierce all over with a fork. Place on a baking sheet and bake until the potatoes are tender and skins are crisp, about 40 minutes.
 - Chop cilantro, slice jalapeño and dice red onion and tomato. Combine avocado and lime juice in a large bowl and mash together, leaving some chunks for texture. Fold in chopped onion, jalapeño, tomatoes and cilantro. Mix well and add salt to taste.
 - Remove the potatoes from the oven and let cool about 10 minutes. Set oven to broil.
 - After cooling, slice each potato in half lengthwise and use a spoon to scoop out the insides. Season skins with salt and pepper and save the scooped potato for another use.
 - Place potato halves skin-side down on the baking sheet and broil for 5 minutes.
 - Remove potato skins and place on a serving platter. Fill the potato skins with guacamole, then garnish with extra jalapeños and cilantro. Serve with ranch dressing for dipping and enjoy!
