Elote Corn

Ingredients

  • 1 pack Cal-Organic Sweet Corn
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 cloves garlic, minced
  • 1 tsp lime juice
  • 1/2 cup cotija cheese
  • 2 tsp chili powder
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 1/4 cup chopped Cal-Organic Cilantro

Directions

1. Add mayonnaise, sour cream, minced garlic, and lime juice to a bowl. Mix together until evenly combined. Set aside.

2. Sprinkle the cotija cheese onto a plate. Set aside.

3. Add chili powder, cayenne pepper, and salt to a small bowl. Mix together and set aside.

4. Once the grill is hot, transfer the corn to the grill. Cook for approximately 6-8 minutes, rotating occasionally, until each cob is charred and cooked through. Then, carefully remove from the grill.

5. Brush each grilled corn cob with the mayonnaise mixture, covering the entire surface. Then, roll it into the cheese mixture. Lastly, sprinkle the seasoning on top. Garnish corn with fresh cilantro. Enjoy!
