Cauliflower Mac and Cheese

Ingredients

  • 1 1/2 heads of Cal-Organic Cauliflower
  • Avocado oil spray
  • Salt, to taste
  • Pepper, to taste
  • 1 cup full fat coconut milk
  • 4 ounces cream cheese
  • 2 tablespoons butter
  • 1 1/2 cups cheddar cheese, divided
  • 1 teaspoon salt
  • 1/2 teaspoon garlic granules
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon onion granules
  • 1/4 teaspoon smoked paprika
  • 1/4 cup Cal-Organic Curly Parsley

Directions

1. Preheat the oven to 400 F.

2. Wash the cauliflower and parsley. Chop the cauliflower into medium sized florets and roughly chop the parsley.

3. Spread the cauliflower on a baking sheet. Spray with avocado oil and add salt and pepper, to taste. Roast for 20-30 minutes or until browned.

4. While the cauliflower is baking, add the coconut milk, cream cheese, butter, 1 cup of the cheddar cheese, and all spices to a pot on medium heat. Stir for 5-10 minutes until it is smooth and creamy.

5. When the cauliflower is done, add it to a large bowl and combine with the cheese sauce.

6. Reduce oven temperature to 350 F.

7. Pour the coated cauliflower into a 9 x 9-inch baking dish that has been sprayed with cooking spray. Top with the remaining cheese and bake for 20 minutes and cheese is melted.

8. Top with chopped parsley and serve.
