Description
Yellow potatoes are most distinctly characterized by their thin, smooth skin and yellow tinged flesh. Their moist flesh and sweet, buttery flavor make them ideal for boiling, baking and frying.
Storage
Organic potatoes should be stored in the refrigerator. Take organic potatoes out of the refrigerator about 24 hours prior to use. When a potato is refrigerated the starches convert to sugars, but if you allow the potato 24 hours at room temperature the sugars convert back into starches.
