Loaded Baked Potato with Cal-Organic Chopped Green Onions

Ingredients

Directions

  1. Preheat the oven to 400 F.  
  2. Pat the potatoes dry and poke in several spots with a fork.
  3. Rub each one with the olive oil and shake on salt and pepper.
  4. Place directly on the oven rack and bake for 55-60 minutes until the skin is crispy and a fork pierces the center easily.
  5. Remove from the oven and let cool for 5 minutes. Cut a slit lengthwise across the top of each potato and gently squeeze the ends toward the center to open it up.
  6. Fluff the inside of each potato with a fork and add 1 tablespoon of butter to each.
  7. Top with ¼ cup of the shredded cheddar, a dollop of sour cream, and a generous sprinkle of Cal-Organic Chopped Green Onions.
  8. Serve immediately.
