Loaded Baked Potato with Cal-Organic Chopped Green Onions

Ingredients
- 2 washed Cal-Organic Russet Potatoes
- 1 tbsp. olive or avocado oil
- salt
- pepper
- 2 tbsp. butter
- ½ cup shredded cheddar cheese, divided
- ¼ cup sour cream
- ¼ cup chopped Cal-Organic Green Onions
Directions
- Preheat the oven to 400 F.
- Pat the potatoes dry and poke in several spots with a fork.
- Rub each one with the olive oil and shake on salt and pepper.
- Place directly on the oven rack and bake for 55-60 minutes until the skin is crispy and a fork pierces the center easily.
- Remove from the oven and let cool for 5 minutes. Cut a slit lengthwise across the top of each potato and gently squeeze the ends toward the center to open it up.
- Fluff the inside of each potato with a fork and add 1 tablespoon of butter to each.
- Top with ¼ cup of the shredded cheddar, a dollop of sour cream, and a generous sprinkle of Cal-Organic Chopped Green Onions.
- Serve immediately.
