Baked Cauliflower Parmesan

Ingredients
- 1 large head Cal-Organic Cauliflower
- 1 cup breadcrumbs
- ½ cup Parmesan cheese
- 1 teaspoon garlic granules
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ cup flour
- 2 large eggs
- 3 cups marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Directions
- Preheat the oven to 425 F.
- Wash the cauliflower and remove the outer leaves. Place it upright on a cutting board and slice it down the middle from top to bottom. Working from the center out, cut 1-inch-thick slices. You should get 3-4 steaks. Any loose florets that fall off, just add to the baking dish.
- In a shallow bowl, mix the breadcrumbs, cheese, garlic granules, Italian seasoning, and salt. Prep another bowl with the flour and a third bowl with the eggs.
- Dip each cauliflower steak into the flour, then the egg, then the breadcrumb mixture. Place into a 9 x 13-inch baking dish and bake for 40 minutes flipping over halfway.
- Spoon sauce over the cauliflower and sprinkle with mozzarella cheese. Bake for 10 minutes.
- Remove from oven and top with fresh basil.
- Serve alone or with a side of pasta.
