Rainbow Chard Bruschetta

Ingredients

  • 1 tablespoon olive oil
  • 2 minced garlic cloves
  • 4 cups Cal-Organic Chopped Rainbow Chard
  • 1 cup quartered grape tomatoes
  • 1/2 teaspoon sea salt
  • 1/2 cup sun-dried tomatoes that are packed in oil
  • 1 tablespoon balsamic vinegar
  • 1/2 cup feta cheese
  • 1 baquette loaf, cut into 1/4" slices and toasted
  • Fresh slivered basil for topping

Directions

1. Add olive oil to a skillet and bring to medium heat.

2. Add in the garlic and sauté while stirring for 2 minutes.

3. Add the rainbow chard, grape tomatoes, and salt. Sauté for 3 minutes, stirring frequently.

4. Next, add the sun-dried tomatoes and balsamic vinegar. Stir for a few minutes to incorporate.

5. Add the feta cheese and stir. Top the baguette pieces with the sauteed mixture and add fresh basil.
