Nacho Fingerlings
Cooking Times
Ingredients
- 24 oz. Cal-Organic Rainbow Fingerling Potatoes
- ¼ c. Olive oil
- 2 tbsp. Taco seasoning
- 1 c. Shredded Monterey Jack or cheddar cheese
- 2 scallions, thinly sliced
- 8 slices Bacon, cooked and crumbled
Directions
- Wash potatoes and cut in either halves or quarters lengthwise. Preheat oven to 425-degrees.
- Toss Party Potatoes with olive oil and taco seasoning. Arrange fingerlings in an ovenproof skillet and bake for 25 minutes.
- Remove from oven and sprinkle with cheese, scallions and bacon; return to oven for 5 minutes, or until cheese is melted. Serve with sour cream, salsa and avocado, if desired.
