Mini Watermelon & Cantaloupe Salad

Ingredients

  • 3 tbsp lime juice
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 2 tbsp fresh mint leaves, chopped
  • 1 tbsp fresh basil, chopped
  • 1 tsp lime zest
  • Pinch of sea salt
  • 1 Cal-Organic Mini Seedless Watermelon
  • 1 Cal-Organic Cantaloupe
  • 1 cucumber, chopped
  • 1/3 cup crumbled feta

Directions

  1. Remove the rind from the watermelon and cantaloupe and cut into ½” cubes.
  2. In a small bowl, add lime juice, honey, olive oil, fresh mint, fresh basil, lime zest, and sea salt. Whisk together.
  3. In a large bowl, add watermelon, cantaloupe, and cucumber. Gently toss together to combine.
  4. Drizzle the dressing over the watermelon, cantaloupe, and cucumber and gently toss together. Crumble the feta on top and serve!
