Mexican Salad with Creamy Cilantro Dressing

Ingredients
- 6 cups Cal-Organic Green Romaine Lettuce
- 1 can black beans, drained and rinsed
- 1 diced tomato
- 3 sliced Cal-Organic Red Radishes
- 1 diced red pepper
- 3/4 cup Cal-Organic Cilantro
- 1 cup corn
- 1 avocado
- 2 stalks Cal-Organic Green Onions
- 1 tablespoon olive oil
- 1/2 teaspoon salt
Directions
1. Wash the romaine, radishes, cilantro, green onions, and cilantro. Chop the romaine, cilantro, and green onions and thinly slice the radishes.
2. In a large salad bowl, add the romaine, black beans, tomato, radishes, red pepper, ½ cup cilantro, corn, and ½ avocado.
3. To prepare the salad dressing, add ½ avocado, green onions, ¼ cup cilantro, olive oil, and salt to a blender and blend until smooth.
4. Toss the salad ingredients with the dressing and serve.
