Lemon Pepper Smashed Potatoes

Ingredients
- 24 oz. Cal-Organic Canyon Red Baby Potatoes
- ½ c. Vegetable oil
- 1 tbsp. Lemon pepper seasoning
- 1 tbsp. Fresh Italian parsley, chopped
Directions
- Microwave potatoes until just tender, about 7 minutes. Smash slightly, but keep whole.
- Heat olive oil in medium sauté pan over medium-high heat. Add potatoes and brown on one side, cooking about 4 minutes. Flip and brown on second side, cooking another 4 minutes. Drain potatoes.
- Sprinkle with lemon pepper seasoning and chopped parsley.
