Easy Kale Pasta Sauce

Ingredients
- 1 bunch Cal-Organic Lacinato Kale
- 1-2 teaspoons salt, divided
- 1/4 cup olive oil
- 2 peeled and smashed garlic cloves
- 8 ounces pasta
- 3/4 cup parmesan cheese (dairy-free or regular)
Directions
1. Wash the kale and strip the leaves from the stem.
2. Add 1 tsp salt to a large pot of water and bring the heat to high.
3. When water is boiling, add the kale leaves and cook for 5 minutes or until tender. Then, remove the kale leaves and put them directly into a blender.
4. Add the pasta to the still boiling pot of water and cook according to the package directions, reserving 1 cup of the pasta water.
5. Add the oil to a small skillet over medium heat. Add the garlic and when it begins to sizzle reduce heat to low and cook for 5 minutes. Remove from heat.
6. Add the garlic and oil mixture to the blender with ¼ cup of the hot pasta water and blend until smooth.
7. Drain the pasta when it’s done and return to the pot. Add the blended kale sauce, the Parmesan cheese, salt to taste, and the reserved pasta water to desired consistency.
8. Top with more parmesan and serve!
