Crunchy Asian Broccoli Slaw Salad

Ingredients
- 1 bag Cal-Organic Broccoli Slaw
- 1 diced red bell pepper
- 2 diced Persian cucumbers
- 2 thinly sliced Cal-Organic Green Onions
- 1/4 cup chopped Cal-Organic Cilantro
- 1/4 cup sliced onions
- 1/4 cup peanuts
- 1 tbsp sesame seeds
- 1/4 cup rice vinegar
- 2 tbsp soy sauce (or tamari)
- 1 tbsp sesame oil
- 1 tbsp honey or maple syrup
- 1 tbsp lime juice
- 1 clove, finely grated garlic
- 1/4 cup avocado oil or olive oil
- TT salt & pepper
Directions
1. Make the dressing:
In a small bowl or jar, whisk together rice vinegar,
soy sauce, sesame oil, honey, lime juice, garlic, and oil. Season with
salt and pepper to taste.
2. Assemble the salad:
In a large bowl, combine the broccoli slaw, bell
pepper, cucumber, green onions, and cilantro.
3. Toss with dressing:
Pour the dressing over the salad and toss well. Let
it sit for at least 10–15 minutes (or up to a few hours) to let the
flavors meld. Top with nuts and sesame seeds and enjoy!”
