Cheesy Smashed Potatoes with Bacon

  1. Preheat oven to 450°. Place potatoes in a large pot of salted water. Bring to a boil; cook covered for 15-20 minutes, until fork-tender. Drain well.
  2. Arrange potatoes on a baking sheet and use a glass to LIGHTLY flatten the potatoes in one piece (be careful not to mash them).
  3. Sprinkle with salt, pepper, cheese, and cooked crumbled bacon. Bake until they are golden and crispy, about 10-15 minutes. Serve with sour cream or desired sauce.
