  1. Juice the carrots to produce about 2 ounces of carrot juice.
  2. Fill a copper mug or highball glass with ice.
  3. Add vodka, lime juice and carrot juice.
  4. Top with ginger beer. Serve with a lime wedge and a carrot chip. To add a pop of color, use our Cal-Organic Farms rainbow carrot chips.
