Gold Beets
Description
Similar to its red counterpart, gold beets feature a bright yellow root with firm skin, strong stems, and green leaves. Its sweet flavor is slightly milder than a red beet, but it is still rich with health benefits thanks to its large amounts of fiber, potassium, and calcium.
Storage
Leaving the beets unwashed, trim the stems leaving an inch attached and refrigerate. Beet roots should stay fresh for two weeks and beet greens should stay fresh for two days.
