Cheesy Smashed Potatoes with Bacon

- Preheat oven to 450°. Place potatoes in a large pot of salted water. Bring to a boil; cook covered for 15-20 minutes, until fork-tender. Drain well.
- Arrange potatoes on a baking sheet and use a glass to LIGHTLY flatten the potatoes in one piece (be careful not to mash them).
- Sprinkle with salt, pepper, cheese, and cooked crumbled bacon. Bake until they are golden and crispy, about 10-15 minutes. Serve with sour cream or desired sauce.
