Garlic & Herb Roasted Potatoes
Cooking Times
Ingredients
- 24 oz. Cal-Organic Canyon Red Baby Potatoes
- 3 tbsp. Olive oil
- 3 cloves Garlic, smashed or minced
- ½ tsp Salt
- ½ tsp Black pepper
- 1 tsp. Fresh parsley, chopped
- 1-2 tbsp. Fresh chives, chopped
- 2 slices bacon, cooked and crumbled
Directions
- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- Place halved potatoes in a large bowl. Toss with olive oil, garlic, salt and pepper until evenly coated.
- Spread potatoes cut-side down in a single layer. Roast for 25 minutes, flipping once halfway, until golden brown and crispy on the outside and fork tender insides.
- Garnish with chopped parsley, chives and crispy bacon pieces.
