Garlic & Herb Roasted Potatoes

Ingredients

  • 24 oz. Cal-Organic Canyon Red Baby Potatoes
  • 3 tbsp. Olive oil
  • 3 cloves Garlic, smashed or minced
  • ½ tsp Salt
  • ½ tsp Black pepper
  • 1 tsp. Fresh parsley, chopped
  • 1-2 tbsp. Fresh chives, chopped
  • 2 slices bacon, cooked and crumbled

Directions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Place halved potatoes in a large bowl. Toss with olive oil, garlic, salt and pepper until evenly coated.
  3. Spread potatoes cut-side down in a single layer. Roast for 25 minutes, flipping once halfway, until golden brown and crispy on the outside and fork tender insides.
  4. Garnish with chopped parsley, chives and crispy bacon pieces.
