Crispy Roasted Nibbles with Creamy Garlic Dip

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Toss with olive oil, salt, pepper, garlic powder and paprika.
  3. Spread potatoes in a single layer and roast for 15 minutes, stirring once halfway, until golden brown and crispy on the outside and fork-tender.

Make the dip
While potatoes roast, mix all dip ingredients in a small bowl until smooth. Taste and adjust seasoning.

  • ½ cup mayonnaise

  • ¼ cup sour cream or Greek yogurt

  • 1 small clove garlic, grated

  • 1 tsp Dijon mustard

  • 1 tsp lemon juice or apple cider vinegar

  • Salt & pepper to taste
