Raw Carrot Salad

Ingredients
- 2-3 Cal-Organic Whole Carrots
- 2 chopped Cal-Organic Green Onions
- 1 tbsp sesame oil
- 1 tbsp rice wine vinegar
- 1 tbsp soy sauce
- 1 tbsp maple syrup
- 1 lime, juiced
- 1 tbsp toasted sesame seeds
Directions
- Wash the carrots and cut off the stem and tip.
- Using a peeler, peel the carrots into thin ribbon slices. Add the carrots to a bowl with the chopped green onions.
- In a small bowl whisk together the sesame oil, soy sauce, rice wine vinegar, maple syrup, and lime juice.
- Toss the salad with the dressing and top with sesame seeds.
