Roasted Sweet Baby Broccoli with Lemon Vinaigrette

Ingredients

  • 1 bunch Cal-Organic Sweet Baby Broccoli
  • Avocado oil spray
  • 3 tbsp olive oil
  • 1 1/2 lemons, juiced
  • 1 tsp lemon zest
  • 1 small garlic clove, crushed
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions

  1. Preheat the oven to 400 F. Line a baking sheet with parchment paper.
  2. Wash the broccoli and trim about 1-inch off the stem end and discard. If the stems are thick, slice them lengthwise to thin them out.
  3. Lay the sweet baby broccoli in a single layer on the prepared baking sheet. Spray with the avocado oil spray and shake on salt and pepper, to taste.
  4. Roast for 15–18 minutes, flipping once halfway through, until the edges are crispy and the stems are tender.
  5. While it’s roasting, make the vinaigrette. In a small bowl, whisk together the olive oil, lemon juice, zest, garlic, Dijon mustard, salt, and pepper.
  6. Transfer the roasted broccoli to a serving platter and drizzle with the lemon vinaigrette. Serve warm or at room temperature.
