Collard Greens Quesadillas

Ingredients

Directions

  1. Add the oil to a frying pan and bring to medium heat.
  2.  Add in the minced garlic and sauté for 2 minutes, stirring frequently.
  3.  Add the collard greens and sauté for 6-8 minutes or until tender.
  4. Add ½ cup of cheese to half of a tortilla and top with ¼ of the sauteed collard greens.
  5. Add ½ tablespoon of the remaining oil into a skillet and bring heat to medium-high.
  6. Fold over the tortilla and add to the hot skillet. Cook for about 3-4 minutes on each side until they are golden brown, and the cheese is melted.
  7. Repeat with the remaining ingredients to make 3 more quesadillas.
  8. Slice and serve.
