Collard Greens Quesadillas
Cooking Times
Ingredients
- 3 tablespoons olive oil, divided
- 2 cups Cal-Organic Chopped Collard Greens
- 2 minced garlic cloves
- ½ teaspoon salt
- 2 cups shredded cheddar cheese
- 4 8-inch tortillas
Directions
- Add the oil to a frying pan and bring to medium heat.
- Add in the minced garlic and sauté for 2 minutes, stirring frequently.
- Add the collard greens and sauté for 6-8 minutes or until tender.
- Add ½ cup of cheese to half of a tortilla and top with ¼ of the sauteed collard greens.
- Add ½ tablespoon of the remaining oil into a skillet and bring heat to medium-high.
- Fold over the tortilla and add to the hot skillet. Cook for about 3-4 minutes on each side until they are golden brown, and the cheese is melted.
- Repeat with the remaining ingredients to make 3 more quesadillas.
- Slice and serve.
