Daikon
Description
Daikon is a white root vegetable that is a part of the radish family. Its unique flavor is often described as mild yet peppery, with a spicy kick. As a superfood, it contains large amounts of enzymes that aid in fat and starch digestion as well as high levels of vitamin C, phosphorus and potassium. This veggie is excellent in salads or coleslaw—roasted, pickled or raw.
Storage
Store daikon tightly wrapped in a plastic bag in the refrigerator. If still attached, remove greens prior to storage.
