Strawberry, Mozzarella and Arugula Salad

  • 4 cup(s) Cal-Organic arugula leaves, stems removed
  • 4 oz bocconcini mozzarella cheese balls
  • 8 oz strawberries
  • 2 tsp balsamic vinegar
  • 2 Tbsp olive oil, extra virgin
  • Salt and pepper to taste


  1. Divide arugula, cheese and strawberries among individual plates. (4 ounces of fresh mozzarella, cut into 16 3/4 inch cubes may be substituted for the bocconcini Mozzarella cheese balls.)
  2. Whisk together the vinegar, salt to taste and oil in a measuring cup until well combined. Drizzle the dressing evenly over each serving. Season with grinds of black pepper to taste; serve immediately.
