Springtime Asparagus

Cook Time: 20 minutes

Serves: 3-4 people

Ingredients

  • Salt and pepper to taste
  • 1 Tbsp. Cal-Organic cilantro, chopped
  • 1 clove(s) garlic, minced
  • 1 Cal-Organic green onion, chopped
  • 1 Tbsp. water
  • 1 Tbsp. peanut butter
  • 1 Tbsp. sesame oil
  • 1 1/2 tsp. soy sauce
  • 1 1/2 tsp. rice wine vinegar
  • 1 1/2 tsp. ginger- fresh, grated
  • 1 1/4 lb. Cal-Organic asparagus, trimmed

Instructions

  1. Steam asparagus until slightly tender, but not entirely cooked.
  2. Combine garlic, ginger, rice wine vinegar, soy sauce, sesame oil, salt and pepper in a bowl.
  3.  Brush asparagus with one tablespoon of dressing.
  4.  Broil for 3 to 4 minutes or until asparagus is tender.
  5.  Whisk together peanut butter, cilantro and water into remaining dressing; toss with asparagus.
  6. Transfer to a serving platter; sprinkle with green onion.
