Roasted Carrots

Cook Time: 20-25 minutes

Serves: 4 people

Ingredients

  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 lb. Cal-Organic/Bunny Luv Baby Carrots
  • 1 Cal-Organic onion - small, cut in thin wedges
  • 1 Tbsp. Cal-Organic parsley, fresh, chopped
  • 1 Tbsp. olive or vegetable oil

Instructions

  1. Toss carrots and onion with oil. Arrange in single layer in 13x9x2 inch baking pan, sprayed with no stick cooking spray.
  2. Roast at 450°F., stirring occasionally, until carrots are lightly brown and just tender, about 20 to 25 minutes.
  3. Stir in parsley, salt and pepper.
