An easy baked carrot side dish.

Serves: 4 people
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 lb. Cal-Organic/Bunny Luv Baby Carrots
- 1 Cal-Organic onion - small, cut in thin wedges
- 1 Tbsp. Cal-Organic parsley, fresh, chopped
- 1 Tbsp. olive or vegetable oil
- Toss carrots and onion with oil. Arrange in single layer in 13x9x2 inch baking pan, sprayed with no stick cooking spray.
- Roast at 450°F., stirring occasionally, until carrots are lightly brown and just tender, about 20 to 25 minutes.
- Stir in parsley, salt and pepper.
