Pickled Beets

Cook Time: 50 minutes

Serves: 4 people


  • 1/8 tsp pepper
  • 1 lb Cal-Organic red beets
  • 1/2 cup(s) cider vinegar
  • 1/2 cup(s) water
  • 1/8 tsp salt
  • 2 tbsp sugar


  1. Trim all beet greens, leaving 2″ of the beet tops on. Wash beets. Place in large 2-Quart saucepan, cover with water and bring to a boil.
  2. Reduce heat to medium and simmer 20-40 minutes (depending on beet size) – until tender when pierced with a fork. Drain, peel and slice.
  3. Bring vinegar, sugar and water to a boil. Place beets and vinegar mixture in 1-Quart serving dish, cover and refrigerate until serving. Drain before serving.
