Lemon Parsley Rice

Cook Time: 35 minutes

Serves: 1 person

Ingredients

  • 1 cup white rice
  • 1/4 cup Cal-Organic parsley, chopped
  • Salt and pepper to taste
  • 2 Tbsp. butter
  • 1/2 lemon (juice from ½ of a lemon)

Instructions

  1. Heat 2 cups water to a boil, and then stir in rice.
  2. Return to boil, cover and reduce heat to low. Cook 20 minutes. Remove lid and fluff rice with fork.
  3. Toss in Curly Parsley, lemon and butter. Season and serve.
