Lemon Parsley Rice

Serves: 1 person
- 1 cup white rice
- 1/4 cup Cal-Organic parsley, chopped
- Salt and pepper to taste
- 2 Tbsp. butter
- 1/2 lemon (juice from ½ of a lemon)
- Heat 2 cups water to a boil, and then stir in rice.
- Return to boil, cover and reduce heat to low. Cook 20 minutes. Remove lid and fluff rice with fork.
- Toss in Curly Parsley, lemon and butter. Season and serve.
