Italian Parsley Potatoes

Serves: 6 people
- 1/2 cup butter or margarine, melted
- Salt and pepper to taste
- 2 lb. Cal-Organic potatoes, peeled and diced
- 1/4 cup Cal-Organic Italian parsley, minced
- In a saucepan, add water to cover potatoes and cook until tender, then drain.
- Combine butter and Italian parsley, pour over the potatoes and toss to coat. Season with salt and pepper.
