Egg Salad Surprise

Prep Time: 20 minutes

Cook Time: 15 minutes

Serves: 1-2 people

Ingredients

  • 1 cup mayonnaise
  • 6 Cal-Organic asparagus spears, peeled and cooked
  • 1 Cal-Organic tomato, sliced
  • 1 head Cal-Organic lettuce - red romaine, shredded
  • 2 lemon(s)
  • 2 shallots, diced
  • 1 avocado, small, diced
  • 1 hardboiled egg, diced
  • 4 oz lobster meat - cooked, diced, reserve claws
  • Salt and pepper to taste

Instructions

  1. Mix diced lobster meat, diced egg and diced avocado (sprinkled with fresh lemon juice) and fine diced shallots with mayonnaise, very gently. Use just enough mayonnaise to coat and bind.
  2. Season to taste with salt and red pepper. Spoon back into the lobster or avocado shell and rest on a bed of shredded red romaine.
  3. Garnish with lemon wedges and asparagus with reserved lobster claws on top.
