Copper Penny Carrots

Serves: 8-10 people

Ingredients

  • 6 cups Grimmway Farms Crinkle Cut Coins Carrots
  • 1 cup sugar
  • 1 tsp. salt
  • 1 Cal-Organic sweet onion, chopped
  • 1 Cal-Organic green bell pepper, chopped
  • 1 (10-oz.) can condensed tomato soup, undiluted
  • 1/2 cup salad oil
  • 3/4 cup vinegar
  • 1 tsp. Worcestershire sauce

Instructions

  1. Cook carrots in boiling water until soft, drain and cool.
  2. Combine remaining ingredients in a bowl and pour over the carrots.
  3. Marinate covered for at least 12 hours.
