Cauliflower Salad with Rainbow Chard and Bacon

Serves: 4

Ingredients

  • 1 medium head Cal-Organic Farms Cauliflower, cut and blanched
  • 1 cup Almonds, lightly roasted
  • 1/2 pound Bacon, cooked and chopped
  • 2 cups Cal-Organic Farms baby Swiss Chard
  • 1 tablespoon Lemon Zest
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Olive Oil
  • Kosher Salt, to taste
  • Freshly ground Black Pepper, to taste

Instructions

1. Combine all ingredients in a large mixing bowl.

2. Gently toss until well combined. Serve.
