Cauliflower Salad with Rainbow Chard and Bacon
- 1 medium head Cal-Organic Farms Cauliflower, cut and blanched
- 1 cup Almonds, lightly roasted
- 1/2 pound Bacon, cooked and chopped
- 2 cups Cal-Organic Farms baby Swiss Chard
- 1 tablespoon Lemon Zest
- 1 tablespoon Lemon Juice
- 2 tablespoons Olive Oil
- Kosher Salt, to taste
- Freshly ground Black Pepper, to taste
1. Combine all ingredients in a large mixing bowl.
2. Gently toss until well combined. Serve.
