Carrots with a Zip

Serves: 6-8 people

Ingredients

  • 2 lb. Cal-Organic/Bunny Luv Carrots
  • 1 cup mayonnaise
  • 2 Tbsp. horseradish, prepared
  • 1 tsp. salt
  • 2 Tbsp. unsalted butter
  • 1 Tbsp. chopped Cal-Organic parsley
  • 1 tsp. paprika
  • 1 Tbsp. parmesan
  • 2 Tbsp. dried, chopped onion

Instructions

1.       Peel carrots. Quarter lengthwise and cut into 3-inch strips. Cook in boiling water, covered until tender, about 10 minutes.

2.       Drain, reserving 1/2 cup cooking liquid.

3.       Place carrots in baking dish. Mix cooking liquid, mayonnaise, horseradish and salt then pour over carrots.

4.       Cover with cracker crumbs, dot with butter, and sprinkle with paprika, parsley and cheese.

5.       Bake uncovered at 375°F for 15-20 minutes.
