- 2 tablespoons Olive Oil
- 1 tablespoon Lemon Juice
- 1/2 teaspoon Dijon Mustard
- 1/4 teaspoon Kosher Salt
- 1/4 teaspoon Black Pepper
- 1/2 pound of Cal-Organic Farms Shredded Carrots
- 1 tablespoon Cal-Organic Farms Parsley for garnish
1. In a large bowl whisk oil, lemon juice, Dijon, salt and pepper.
2. Add carrots and stir to mix well.
3. Garnish with parsley and serve.
