Carrot Salad

Ingredients

  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice
  • 1/2 teaspoon Dijon Mustard
  • 1/4 teaspoon Kosher Salt
  • 1/4 teaspoon Black Pepper
  • 1/2 pound of Cal-Organic Farms Shredded Carrots
  • 1 tablespoon Cal-Organic Farms Parsley for garnish

Instructions

1. In a large bowl whisk oil, lemon juice, Dijon, salt and pepper.

2. Add carrots and stir to mix well.

3. Garnish with parsley and serve.
