Carrot Pilaf

Cook Time: 25-30 minutes

Serves: 6-8 people

Ingredients

  • 1 cup Cal-Organic/Bunny Luv Shredded Carrots
  • 1 Cal-Organic onion, chopped
  • 1 Tbsp. unsalted butter or margarine
  • 1 cup long grain rice, uncooked
  • 1 (14.5–oz.) can low sodium chicken broth
  • 1 tsp. lemon pepper

Instructions

1.       In a saucepan, sauté carrots and onion in margarine until tender. Add rice and stir to coat. Stir in broth and lemon pepper. Bring to a boil. Reduce heat.
2.       Cover and simmer for 20 minutes or until rice is tender.
