Bran Flax Muffins

Serves: 15 medium muffins

Ingredients

  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 2 eggs, beaten
  • 1 tsp vanilla
  • 3/4 cup milk
  • 1 cup chopped nuts
  • 1/2 cup raisins (optional)
  • 2 apples, peeled and shredded
  • 1 1/2 cup(s) Cal-Organic/Bunny Luv Shredded Carrots
  • 2 tsp baking soda
  • 1 cup brown sugar
  • 3/4 cup oat bran cereal or hazelnut meal
  • 3/4 cup flaxseed meal
  • 1 1/2 cup(s) whole wheat pastry flour or unbleached white flour

Instructions

  1. Pre-heat oven to 350°F.
  2. Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.
  3. Stir in carrots, apples, raisins and nuts. (You can also put these ingredients in a food processor if you like that consistency better.)
  4. Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. DO NOT OVER MIX.
  5. Fill muffin cups 3/4 full. Bake at 350°F for 15-20 minutes.
