Bok Choy, Carrots and Green Beans

Serves: 6 people


  • 2 Cal-Organic Whole carrots, sliced diagonally
  • 1 cup Cal-Organic green beans, cut
  • 1 cup Cal-Organic bok choy, chopped
  • 1 tsp peanut oil
  • 3 Tbsp shallots, minced
  • 1/3 cup vegetable broth, low-sodium, low-fat
  • 1 Tbsp soy sauce, light


  1. Heat oil in wok or skillet over high heat.
  2. Add the shallots and sauté for 3 minutes. Add carrots and stir fry for 3 minutes. Add green beans and stir fry for 2 minutes. Add bok choy and stir fry for 2 minutes. Add broth and simmer for 2 minutes.
  3. Add soy sauce and serve.
